Guacamole que mole

Homemade guacamole, nothing beats this simple recipe, and it’s super easy to make. I like to make it for visits, as we always have a table full of different things to eat (Spanish style). This guacamole is gone the fastest. We also enjoy with toast in the morning and some poached eggs.



  • 2 ripe avocados
  • 1/4 onion, finely chopped
  • 1 jalapeno, finely chopped (optional)
  • Chopped Cilantro
  • Lime Juice (to taste)
  • Salt to taste
  • 1/2 tomato, finely chopped


As I owe a food processor, this kind of things I make there. I place all the ingredients in it and mix.
Then I chop some extra tomato, onion, and cilantro to place on top to make it look nice.

If you don’t own a mixer is ok, much better. Chop as fine as possible the tomato, onion, jalapeño and cilantro.
In another bowl mash up the avocados, make a mixture as soft as possible.
Mix all together, add the salt and the lime juice, and you are done.

Please have in mind that avocados get brown fast, the lime helps but is not a miracle maker, so make the guacamole just before you want to serve it.

Get as creative as you want, I add sometimes garlic.
